Last night, my sister came over and we had dinner together and watched a movie from my extensive DVD collection. What we cooked for dinner, together, was Chicken and Red Potato with Green Beans. The meal was very good and we cooked enough that there is enough chicken to last a week. This meal has lots of steps so I am going to break down the process in each part of the meal with the final result posted at the end since you are really cooking three meals and combining them on one plate.
- Ms. Dash
- Salt & Pepper
- Vegetable Oil
- 1 Garlic Clove
- 3 to 6 Chicken Breasts
- 3 Red Potato’s
Cooking time varies on the type of oven you have. If your oven cooks “hot” at 400o degrees this might take you 35 to 40 minutes, however the best range is about 40 to 55 minutes for most ovens. Wow! Our first step! Preheat the oven to 400o degrees and then leave it be.
Red Potato’s (30 to 40 minutes; 10 minutes prep time)
After through chopping up all the potato’s into bit sized chunks, place them all in dish. Use the Ms. Dash, Salt, and Oil and cover the potato’s with a thin layer. Be sure to place the chopped up garlic cloves along with the potato’s. This gives the potato’s that flavor in flavor. You don’t want the potato’s thoroughly covered as it will remove the taste of the potato’s themselves. You can place the potato’s in the oven at anytime, even before the oven preheats to 400o degrees. You cook the potato’s as long as you are preparing this meal.
Chicken (20 to 30 minutes; 5 minutes prep time)
Depending on how many people are having dinner or on how much you want left over for other things (including salads, quesadillas) make sure you can place it all in open container when cooking. First off, cut off the fat and the yucky parts off the chicken. Use a straight edge knife to do so. Before you place the chicken in, cut them either the long way or in half depending on how big your cooking container is.
Green Beans (5 minutes (after light boil); 2 minutes of prep time)
Simply put. Cut the ends off, place in pot with the light boiling water. There should only be a half inch of water in the pot. Boil it and place the green beans. Cook for 2 minutes at the end of the chicken and potato cooking cycle.
